Southwestern Pork Chalupas

‘You’re going to love this zesty dish! I like to serve it with a chopped tomato and avocado salad.’

Directions:

Combine beans, chiles, water and spices in a large slow cooker; mix well. Add roast; cover and cook on low setting for 4 hours. Remove roast and shred, discarding any bones; return pork to slow cooker. Cover and cook on low setting for an additional 2 to 4 hours, adding more water if necessary. To serve, arrange tortilla chips on serving plates. Spoon pork mixture over chips; garnish as desired.

Makes 10 servings

Optional Garnish: shredded Mexican-blend cheese, sour cream, salsa, sliced black olives, sliced jalapeño peppers.

Harvest Pork & Squash Stew

‘Try this flavorful stew on a fall day after the first snap of cold air. I like to serve it with warm sweet potato biscuits.’

Directions:

Season pork with salt and pepper. Heat oil in a large skillet over medium heat; add pork and onion. Cook, stirring often, until pork is browned all on all sides, about 5 minutes; drain. Combine pork mixture with remaining ingredients in a large slow cooker; stir gently. Cover and cook on low setting for 7 to 8 hours.

Makes 8 servings
