Crockpot (Or Instant Pot slow cooker) recipes! Wondering what’s for dinner? Maybe Chicken Pot Pie Soup, Sauerkraut Meatballs, Lentil loppy Joe’s or Broccoli Cheese Soup?! These are all my crockpot recipes I am sharing today! I love to make prep dinner in the morning (or even night before) and let my slow cooker/crock pot do the heavy lifting during the day.

Chicken Pot Pie Soup:
For this recipe, I used rotisserie chicken and dried spices.

Cranberry Sauerkraut Meatballs:

Lentil Sloppy Joe’s
1 pound dried lentils
10 oz package of frozen seasoning blend (onion, peppers)
2 tbsp of olive oil
1/2 cup ketchup (I used spicy)
2 tbsp mustard of choice
4 cups vegetable broth (I used better than bouillon)
2 8 oz cans tomato sauce
2 tbsp apple cider vinegar
2 tbsp olive oil
1 tbsp worcestershire sauce (vegan if needed)
2 tbsp brown sugar
1tbsp chili powder
1/2 tbsp paprika

Mix All sauce ingredients together in a big bowl. In the crockpot blend onion/peppers with oil. Add rinsed lentils on top. Cover with the sauce mixture. Cover and cook on low for 6-8 hours.

Broccoli Cheese Soup:
1 lbs Velveeta Queso Blanco
3 cups milk
1 cup water
32 oz frozen broccoli
1 can cream of celery soup
1 cup diced carrots
½ large or 1 small diced onion
3 tbsp butter
Salt and Pepper

Saute butter, carrots and onion on stove top. Add to crockpot. Add in frozen broccoli, cream of celery, milk, water, cheddar and cubed velveeta. Let cook on low minimum 4 hours. I usually set in the morning and come back to season with salt and pepper right before dinner. Also, this is a perfect dinner to prep in the crockpot the night before, refrigerate and pop in the crockpot in the morning. Perfect for busy days! Serve with a crusty bread. I used ‘take and bake’ loaf from ALDI or homemade dutch oven crusty bread.
