Despite using pumpkin in a dessert being a fairly alien concept to an Australian, today I make a classic loaf of Pumpkin Bread! Similar to Banana Bread, this easy baked treat features pureed pumpkin, brown sugar and delightful spices. Served warm, cold, or toasted, this beautiful Pumpkin Bread is great for a mid morning or afternoon snack – give it a go! 🙂
2 1/2 Cups of Plain All Purpose Flour
1 Teaspoon of Baking Powder
1 Teaspoon of Baking Soda
1 Teaspoon of Cinnamon
1/2 Teaspoon of Ground Ginger
1/2 Teaspoon of Mixed Spice (aka Pumpkin Spice)
1 Cup of Brown Sugar
410g (15oz) Can of Pumpkin Puree
3/4 Cup of Vegetable Oil
1/4 Cup of Water
2 Teaspoons of Vanilla Extract
Preparation Time: About 10 minutes
Cooking Time: About 45 minutes approx.
