In today’s video I will be sharing with you three fast and easy crockpot slow cooker recipes. We will be cooking up some white chicken chili, shrimp fajitas, and a cajun shrimp crab boil all in the crockpot! These recipes are packed with tons of flavor and require minimal ingredients! WHITE CHICKEN CHILI
1 lb boneless skinless chicken breasts
1 yellow onion – diced
2T minced garlic
24 oz. chicken broth – (low sodium)
2 15oz cans great Northern beans – drained and rinsed
2 4oz cans diced green chiles
1 15oz can whole kernel corn – drained
1 tsp salt
1/2 tsp black pepper
1 tsp cumin
3/4 tsp oregano
1/2 tsp chili powder
1/4 tsp cayenne pepper
small handful fresh cilantro – chopped
4 oz reduced fat cream cheese – softened
1/4 cup half and half
-Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
-Top with diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth and cilantro. Stir.
-Cover and cook on low for 8 hours or on HIGH for 4 hours.
-Remove chicken, shred, then return to slow cooker.
Add cream cheese and half and half, stir, then cover and cook on HIGH for 15 minutes, or until chili is creamy and slightly thickened.
Stir well and serve with desired toppings.
CROCK POT STEAK FAJITAS
2 peppers sliced (any colors)
1 onion (chopped in large chunks)
12oz sirloin steak
1/4C fajita season
3/4C water or beef broth
2T olive oil
2T minced garlic
salt, pepper, garlic to taste
-Add peppers and onions to bottom of crock put and then add slice steak
-Add seasonings, fresh garlic, olive oil, and water
– Cover and cook for 4 hours on hight or 8 hours on low
Serve on a flour tortillas or bed of lettuce with some corn and black beans with guacamole on top

CROCK POT CAJUN SHRIMP CRAB BOIL
1 lb Sausage, smoked
1 lb Shrimp
1/4C chicken broth
1T shrimp & crab boil concentrate by Zatarains
1T cajun seasoning
1T Italian seasoning
1 Bell pepper chopped
bunch of green onions chopped
1 Onion chopped
1T Onion powder
2 lbs Russet potatoes chopped in medium size cubes
-Spray the slow cooker with nonstick cooking spray
-add the sausage
-Pour in the potatoes, onion, bell pepper, and garlic
-Add the Cajun, shrimp boil, onion powder, and Italian seasoning evenly on top.
– Add chicken broth
-Cover the cooker with the lid and cook on HIGH for 4 hrs or on LOW for 6-8 hrs (stir half way through so potatoes cook evenly)
-Add in the shrimp and continue cooking for an additional 15-20 minutes or until the shrimp are completely cooked.
-Garnish with fresh green onions.
I recommend serving on a bed of white rice!
